Chef John's Vegetarian Poutine

Ingredients

1 tablespoon vegetable oil

1 to 1 1/2 pounds mushroom

4 tablespoons butter

1 cup diced onions (you can also add some garlic if you want)

salt, freshly ground black pepper, and cayenne to taste

1/3 cup all-purpose flour

4 cups homemade vegetable broth

fresh chives to garnish

cheese curds

frozen crinkle cut fries

Directions

Heat pan to medium heat, melt butter.
Add diced onion & mushrooms. Season with salt, pepper and cayenne. Cook until golden brown, then add flour to make a roux. Stir until it smells like pie crust, about 3-4 minutes.

Add vegetable broth and increase heat to high. Bring to a simmer, then reduce heat back to medium. Stir occasionally until gravy reaches desired thickness. Taste test, and add more salt if desired.

To assemble:

Place fries in a bowl. Scatter cheese curds on top, then cover with gravy. Top with chives.
